Kingsgate Wings

This recipe takes inspiration from a local spice brand and Nando’s, a Portuguese chicken chain. A perfect fit for most occasions(and quarantine), there are many ways that you can approach wings. Here’s a recipe for wings on the braai, as grilling is commonly referred to in South Africa.

Before you put your wings on the grill(or braai), allow them to reach room temperature. If you’re pulling them out of the fridge, you can season them and let them sit until they’re ready to go.

Preheat grill(or braai) to 400F. Lightly coat the wings in olive oil by tossing them in a bowl. This helps your seasonings and flavors stick to them. Lay them out, spacing them out enough to ensure that you properly cover them. Salt and pepper the wings. Cover liberally with Funky Ouma African Rub. Aim for less salt as the Funky Ouma African Rub has a salt content as well. Turn wings over and repeat. Return wings back to bowl. Gradually add enough Nandos Peri Peri Sauce to liberally cover wings toss once more.

Lay wings evenly over the grate, skin side down. Once you develop a good sear(look for solid grill marks) on the skin side, flip the wings. Cook until underside is slightly blackened or has developed grill marks. Remove wings from grill. Cover wings with additional sauce and return to grill until done. When bones begin to peak from the ends of the wings, you good.
